Lentil, sweet potato & quiona patties


INGREDIENTS

  • 1 sweet potato peeled and chopped in cubes
  • 1/2 cup red lentils
  • 1/2 cup quinoa
  • pinch of himalayan salt
  • 1 egg
  • 1/4 cup of milk
  • 1/4 cup of buckwheat pancake mix

 

METHOD

 

Boil sweet potato, lentils, quinoa and salt until cooked through
Mash together in a bowl, whip egg an milk and then stir in the pancake mix and mix to nice pancake consistency
Stir in the lentil quinoa mix, place a tbsp of mix in fry pan and gently fry both sides.
Serve by themselves or with a salad on top or choice of other protein
