Fruit & grain free muesli


INGREDIENTS

  • 1 cup of macadamia nut pieces
  • 1 cup of almond nut pieces
  • 1 cup of cashew nut pieces
  • 1/2 cup of pecan nut pieces
  • 1/2 cup pistachio nut
  • 1/2 cup of sunflower seeds
  • 1/2 cup of pumpkin seeds
  • 1 cup shredded coconut
  • 1/4 cup cacao nibs
  • 1/4 cup chia seeds
  • 1/2 cup coconut oil
  • 1/4 cup coconut nectar
  • 4tsp vanilla powder
  • 2tsp of cinnamon
  • pinch of Himalayan salt

 

METHOD
Soak nuts overnight to activate and then dry them out.
Place nuts, seeds, cocoa nibs and coconut in a baking tray.
Melt oil in small pan and stir in coconut nectar, vanilla and cinnamon.
Pour liquid over the nut mix and mix thoroughly.
Bake in oven at 160 degrees for about 1 hour staring and mixing every 20 mins.
Store in airtight container.
